Bacon surprise! The classic Tuesday night dinner-in-a-pinch.
Ingredients
Bacon - 1/2 lb thick cut
basil
cracked black pepper
onion - 1/2
red chilli - 1/2
tomatoes - 4
olive oil
salt
parmesan
pasta for 2
tomato paste - 1/2 cup
full, Italian red wine - 1 glass
Directions
Cook bacon in with pepper on low heat until brown
add garlic, inion, chilli, basil: soften
add chopped tomatoes, cook down
Cook pasta in salty, oily water - to al dente
add wine, tomato paste and pasta to pan
Cook covered on low heat until texture correct
add handful of grated parmesan
add sprinkle of parmesan on each plate
