French Onion Soup

Ah, the onion. Possibly one of the most dangerous vegetables (try cutting one with a blunt knife) and also a main cause of riots in India (they are a large part of the Indian food basket, so inflation in onion prices has on more than one occasion led to unrest), the humble onion is underrated. Help take the power back with some classic French onion soup.
INGREDIENTS
One stick of butter
Salt and Pepper (Spindrella cut it up one time.... Or use the seasoning)
Five onions, diced
Two pieces of garlic, diced,
Two glasses of red wine (medium bodied)
Three heap tablespoons of flour
Heap tablespoon of thyme, or HDP (herbes de provence, which I use a lot!)
Carton of beef stock.
Handful of Gruyere, other Swiss cheese, or mild cheddar if that is what you have.
Some nice bread, if desired.
DIRECTIONS (This is dead easy)
Take a pan and use a low/med heat. Put in the butter, salt, pepper, onion, garlic, and thyme/HDP.
Saute this for 15 mins or until soft and brown.
Add one glass of wine to the pan.
Drink the other glass (it's your birthday).
Cook the wine off until the onions are nearly dry.
Add the flour and mix in. Cook for 5-10 minutes until the floury taste is gone.
Add the beef stock slowly, whisking the whole time. Bring to the boil.
Taste. Add salt and pepper if needed.
Serve in a bowl with the handful of cheese thrown in.
Serve freestanding or with bread.
